We match on the ingredient, not the wording. Watching chicken catches “chicken meal” and “chicken fat (preserved with mixed tocopherols),” because they come from the same animal. When a match is indirect we say which watched ingredient caught it rather than just flagging the line.
Where a label is genuinely ambiguous we stay quiet. “Beef broth” and “chicken broth” are one entry in our library, so watching a protein will not flag a broth: the printed line does not say which animal it came from, and we would rather miss than cry wolf.
